Chocolate Angel Cupcakez

Ingredients
1 cup flour
2 cups sugar
1/2 cup baking cocoa (powdered)
1 teaspoon baking powder
1 teaspoon cream of tartar
1/4 teaspoon salt
1/2 teaspoon lemon juice
1 teaspoon vanilla extract
1 1/2 cups egg whites (from approximately 10 large eggs)
1 teaspoon vanilla
1 teaspoon red food coloring

1. Preheat oven to 325°F.
2. Combine egg whites with salt, and beat until foamy.
3. Add cream of tartar, and continue to beat until stiff.
4. Stir in sugar, lemon juice, and vanilla.
5. In a separate bowl, stir together flour, cocoa, and baking powder.
6. Fold flour mixture into egg whites gradually.
7. Spoon batter into cupcakez liners until 1/2 full.
8. Bake for approximately 20 minutes.
9. Cool cupcakes before frosting.
